Wood-Fired Oven Research: Sweden

My ongoing interest in the construction of wood-fired ovens brought me to the small town of Fengersfors, Sweden in June of 2016 where I spent two days volunteering at the local Brukets godaste bakery. They taught me how to make their sourdough bread and fire their oven. I showed them how I make and stretch my pizza dough. Perhaps I will return one day to help build an outdoor earthen oven for their famous Friday evening pizza nights?
